At a small lunch café, I noticed that the menu offered only two main dishes each day. By one o'clock, one of them was sometimes sold out. I wondered why the owner did not simply prepare more food or offer a longer menu. When the café was quiet, she explained how she planned the week's ingredients.

Several vegetables appeared in different dishes, so an unused ingredient could still be cooked the next day. A large menu would require more ingredients that might not be used before losing their freshness. Preparing everything in advance would also create waste on a rainy day with few customers. However, she admitted that selling out too early disappointed regular customers.

She had begun taking reservations for people who knew they would arrive after twelve thirty. That gave her some information about demand without requiring her to guess every order. I reserved a meal the following Friday and found my portion waiting when I arrived. The system would not suit everyone, especially people making an unplanned visit.

Still, it showed me that a sold-out sign could reflect a careful decision rather than poor preparation. I began looking at the short menu as a choice with both benefits and limits.
